Beef: Getting Started
Step 1: Select your pick-up month below. This is when your meat will be fully aged, vacuum-sealed, frozen, and ready to come home.
Step 2: Select your portion. Choose from ¼, ½, or the whole animal.
Step 3: New customers submit a one-time $250 deposit. If you’re back for seconds, you get to skip this step.
Then sit back and wait for pick-up day while we take good care of your cattle and butcher the meat to your specifications. Before pick-up, we’ll give you a call to settle up and let you know when to swing by the butcher.

Average Hanging Beef Weights:
1/4 = 200 lbs
1/2 = 400 lbs
Whole = 800 lbs
What does hanging weight actually mean?
After cutting and trimming, most customers take home 65–70% of hanging weight as packaged beef.
Example:
- 200 lb hanging weight
- Take-home beef: 130–140 lb
- Bone removal
- Excess fat trimming
- Moisture loss during aging
- This is normal and unavoidable with quality beef.
